Tips

If you want a thicker sauce, add less oil or slightly increase the amount of gherkins.
For a stronger flavor, you can slightly increase the capers or the mustard.
If you prefer it milder, add a splash more milk. Prepare it at least 30 minutes before serving: the flavor will be even more intense.

Storage

You can keep it in the refrigerator in an airtight container for 2 days.
Stir well before serving as it may separate slightly.

  • Can I make it without a blender?

Yes, you can finely chop everything with a knife, although the texture will be less creamy.

  • Is it suitable for fish too?

Absolutely yes, it goes very well with poached or grilled fish.

  • Can I freeze it?

Better not, because the texture changes once thawed.

  • Can I use it as a sandwich spread?

Yes, it’s also perfect in sandwiches or to enhance flatbreads and toasts.

This green barbecue sauce is one of those preparations to always keep in mind: simple, inexpensive and capable of giving an extra kick to any dish.

Try it at your next barbecue and you’ll see everyone asking you for the recipe.
