  • To start cooking these fabulous custard cream doughnuts
    Place the two flours, salt, and sugar all in the bowl of the stand mixer. Briefly mix to combine the dry ingredients.

    Add the water gradually and the crumbled yeast, then the eggs, slightly beaten with a fork, and always mix with the machine at speed 2.

    Now add the softened butter a little at a time, allowing it to be well incorporated into the dough.

    It will take about 10 minutes. The dough should become smooth, elastic, and slightly sticky.

    Transfer the dough to a clean surface (not floured) and knead it gently 2-3 times to form a smooth ball.

    Place the dough in a bowl and cover it with plastic wrap. Let it rise for 2-3 hours or until it triples in volume.

    Once the dough has risen, turn it out onto a floured surface and roll out the dough with a rolling pin to form a rectangle about an inch and a half thick.

    Make two folds, roll it out again, and make two more folds in the opposite direction, let it rest for 10 minutes covered with a tea towel.

    Now form a rectangle again using a rolling pin and use a pastry cutter or a glass to cut out round doughnuts. Fry the scraps without re-kneading them.

    Let your doughnuts rest for 1 hour.
    Heat the sunflower oil in a deep fryer to about 340°F using a kitchen thermometer.

    Carefully immerse each doughnut in the hot oil. I cooked them one at a time to monitor the cooking better.

    Fry each doughnut for about 2 minutes on one side, turning it often. Transfer the fried doughnuts to a paper towel to drain briefly. Allow them to cool before filling them with custard cream inserted into a pastry bag and then cover the surface with powdered sugar.
