Just add a salad of mixed leaves, but we could also combine a base of grilled vegetables such as zucchini, peppers, eggplant as you like to have a dish that can be prepared in every season.

- 1 package mixed salad greens
- 4 fillets salmon
- 1/2 lemon (zest cut into strips)
- 2 tbsp green peppercorns (whole)
- 2 tbsp pink peppercorns (whole)
- 1/2 tsp thyme
- to taste extra virgin olive oil
- 10 datterini cherry tomatoes (mixed yellow and red)
- to taste salt
- to taste pepper
- to taste onion (a few rings, as desired)

Preparation for the recipe: Salad with marinated and grilled salmon
I prepare the marinade by mixing the green and pink peppercorns in a bowl and crushing them with a mortar or a meat mallet.
Then I add some lemon zest strips — only the yellow part, excluding the white pith (albedo), which tastes bitter.
After the marinating time, I put a grill on the heat and let the metal heat up properly.
Then I drain the salmon fillets from the marinade, pat them lightly, and cook them on both sides leaving the inside slightly pink: it’s essential not to let the fish become dry!
While the salmon cooks, I wash the mixed greens and the datterini tomatoes, slice a few rings of onion if I like, and arrange the vegetables into four individual bowls separately.
When the fillets are cooked and tender, I place them on each plate, adding a little of the marinade or, very simply, some extra virgin olive oil and a splash of apple cider vinegar or lemon juice, for that touch of acidity that, for me, doesn’t upset the balance of the dish!
At this point we can sit down to enjoy this salad of mixed greens, datterini tomatoes and a fillet of salmon marinated with mixed peppercorns!
