the preparation of the recipe is very minimal and quite intuitive without many words….
I put the pot on the flame where I will cook the pasta and prepare the pesto.
I wash the ripe firm tomatoes and then remove the seeds inside.
I cut the vegetables into large chunks, placing them in the mixer or blender, adding the peeled almonds and blending everything.
I add the washed and patted dry aromatic herbs to remove as much water as possible and drizzle in the extra virgin olive oil, then adjust the amount and seasoning with salt and pepper.
If needed, I also add grated cheese, always adjusting the taste and creaminess of the pesto to personal preference.
I lower the pasta, drain it al dente, and place it directly in a pan or wok, dressing it with the aromatic pesto with almonds, mint, and parsley.
