The soft cookies with apples, raisins, and almonds are delicious aromatic treats rich in fruit, perfect for children’s breakfast and snacks. Last year I made the ones with peaches and ones with apples which were very successful, today I decided to offer you an autumn version enriched with raisins and almonds.
I decided to make a very soft product, perhaps more similar to cakes than to cookies, but they are really delicious; moreover, being single portions, they are convenient to take to work or school.
My recipe is very simple, no need to whip anything, just mix all the ingredients in a bowl, shape them with a spoon and bake them; they are ideal for those who love apple desserts that can be prepared quickly and are also versatile, you can customize them by adding spices, citrus, and nuts.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 eggs (medium, mine weighed 100 g)
- 1/4 cup peanut oil (or 60 g of softened butter)
- 3.5 tbsp milk
- 1 tsp vanilla extract
- 1 tsp lemon zest (grated)
- 2 tsp baking powder
- 1 pinch salt
- 2 Golden Delicious apples (or large Renette)
- 1/3 cup raisins
- 1/2 cup sliced almonds
- 2 tbsp vanilla powdered sugar

- 1 Baking tray

- Parchment paper
Procedure
To get a great dough, use ingredients at room temperature.
Rinse the raisins under running water, then place them in a glass, cover with lukewarm water, and let them rest while you prepare the dough.
In a bowl, combine the eggs with the sugar, mix very well with a fork, then add the oil (or softened butter), milk, lemon zest, and vanilla; blend everything. Add the flour, a pinch of salt, sifted baking powder, and mix; you should get a soft and uniform mixture.
Wash the apples, peel them, remove the core, and cut them into 1/2-inch cubes.
Drain the raisins, squeeze them well to remove as much water as possible, and pat them dry with two sheets of kitchen paper.
Incorporate the apples and raisins into the dough.
Line a baking tray with parchment paper, scoop the dough with a spoon and place it on the tray with the help of another spoon; you should get 12 cookies. Don’t worry about the weight; they will turn out great even if they are not all identical.
Distribute the sliced almonds on top of the cookies.
Bake the tray in a preheated static oven at 350°F for 20/25 minutes or in a convection oven at 345°F for 16/17 minutes; they should become golden.
The soft cookies with apples, raisins, and almonds are ready; let them cool completely and dust them with powdered sugar.

Let the cookies cool for a few hours, then store them on a tray covered with plastic wrap or in a cake container.
