A super creamy dish but strictly without cream! While preparing the sauce, cook the pasta; we preferred spaghetti/spaghettoni, but even short pasta or gnocchi would work well. A success in any case!

INGREDIENTS FOR SPAGHETTI WITH PARMESAN CREAM, CRISPY SPECK, AND ZUCCHINI FLOWERS
- 14.1 oz spaghetti
- 3.5 oz speck
- 4.2 oz Parmigiano Reggiano DOP (grated)
- 25 zucchini flowers
- to taste black pepper

PREPARATION OF SPAGHETTI WITH PARMESAN CREAM, SPECK
Cut the zucchini flowers (already cleaned by removing pistil and stem) and the speck into strips. Place the speck in a pan without oil until crispy. Set everything aside.
Boil the pasta and drain it two minutes before it’s done, finishing cooking it in the pan where you toasted the speck, adding pasta cooking water a little at a time. Sauté over high heat.
Sprinkle with parmesan and stir, adding more cooking water if needed.
Before serving, add the zucchini flowers and crispy speck. Mix thoroughly and, if you like, add a pinch of pepper.

If you want a more intense flavor, you can replace part of the parmesan with good pecorino!
Alternatively, you can toss the pasta with fresh cheese like gorgonzola or taleggio!
