Are you looking for a tasty and creative way to prepare chicken breast? Today I prepared the Chicken Parmesan recipe, easy, economical, and flavorful for a meat main course with chicken gratinated with a crispy parmesan coating, definitely a simple and very tasty dish!

The chicken parmesan slices are a dish that I’m sure everyone will like, even the little ones at home because it is tender and crispy.

This main course with breaded chicken breast with breadcrumbs and parmesan reggiano can also be prepared with other varieties of meat like veal and pork.

I did a quick pan fry and then continued cooking the chicken with bread and cheese coating in the oven, but if you prefer, extend the pan frying until complete browning.

The ideal for the Chicken Parmesan coating recipe is PANKO, which is a specific type of flake breadcrumb typical of Japanese cuisine and used to prepare fried shrimp as well as vegetables and meat.

I love chicken; it’s the most eaten meat at home, it’s digestible, versatile, and, if cooked properly, also light. If you love traditional chicken mains, try the Marche-style ‘ncip ‘nciap chicken.

TIPS ON COOKING CHICKEN
Should chicken be washed?
No. Chicken should never be washed under water, because washing does not eliminate bacteria and can actually spread them on kitchen surfaces like cutting boards or knives. It’s sufficient to dry it with paper towels before cooking.

How should the chicken be once cooked?
The chicken must be always well cooked and never pink or bloody. The meat should be completely white inside to be safe to eat.

What should be done to avoid dangerous contamination?
After touching raw chicken, it’s important to thoroughly wash hands, utensils, and surfaces to avoid cross-contamination with other foods.

Ingredients CHICKEN PARMESAN

  • 2 chicken breasts
  • 2.3 oz flour
  • 3 eggs
  • 6.7 oz breadcrumbs (preferably PANKO)
  • 4.2 oz grated parmesan
  • 4.4 oz mozzarella
  • 4 tbsp tomato sauce (for me Mutti datterini)
  • to taste vegetable oil
  • to taste salt
  • to taste basil

Steps

  • 1) First, you need to cut each chicken breast in half lengthwise.

    2) Use a meat mallet to flatten the meat slightly and season with salt and, if you like, a pinch of pepper.

    3) In two separate plates, place the ingredients for the breading: the EGGS beaten, and the flour.

    4) In another plate, mix the breading (breadcrumbs or panko) and grated parmesan cheese, mixing well to combine the flavors and textures.

    5) Pass the chicken first in the flour, then in the beaten egg, and finally in the parmesan mixture.

    6) Heat a little oil in a pan, then cook each breaded chicken breast with breadcrumbs and grated cheese for 2/3 minutes on each side.

    7) When golden, transfer the cooked chicken slices from the pan to a baking sheet lined with parchment paper.

    8) Top each Chicken Parmesan with a slice of MOZZARELLA and a tablespoon of tomato sauce, and continue to bake for the remaining minutes.

    9) When the BREADIED CHICKEN is ready, remove the tray and add a basil leaf to each piece of chicken and serve immediately.
