The almond paste doves are Easter treats similar to Ricciarelli very easy to make; the dough is made from almond flour, sugar, and egg whites to which the aromas are added, in a few minutes you will make delicious pastries with a soft heart and a thin crispy crust… absolutely irresistible!

To have a soft consistency, you need to pay attention to the cooking, which should be quick at a low temperature so they remain soft inside and very pleasant to bite into. The dough needs resting, but with the recipe I propose today, an hour in the fridge will suffice.
