Ingredients

The weight of the egg whites is indicative because coconut flour tends to absorb a lot of liquids, so add them little by little, and each coconut flour has a different absorption. You should get a sticky dough that allows you to form balls without problems; if they fall apart, you need to add more egg white.

  • 5.3 oz grated coconut (desiccated)
  • 3.5 oz almond flour
  • 3.9 oz egg whites (about 3 egg whites)
  • 6.3 oz granulated sugar
  • 1 teaspoon vanilla extract (or other flavoring as desired)
  • as needed granulated sugar (for coating)
  • 13 almonds (for decoration)

Procedure

  • In a bowl, insert the coconut flour, almond flour, and sugar, and mix the ingredients well.

    Add the vanilla and egg whites, and work the mixture until you get a sticky dough.
    Form balls of 1.4 oz (you can make them smaller if you prefer).

  • Put some granulated sugar in a small bowl.

    Roll the amaretti in the bowl until they are covered with sugar, insert an almond in the center, place them on the baking sheet lined with parchment paper, and put them in the fridge for 1 hour.

  • Bake the cookies in a preheated static oven at 320°F for about 18 minutes; they should remain soft and should not become dark. In the last few minutes, check them often.
    Remove from the oven and let them cool completely.
