5-Minute Yogurt Muffins

The 5-minute yogurt muffins are delicious soft and light treats perfect for children’s breakfast or snack; made with simple ingredients, they are prepared in a few minutes without whisking anything.

Over the years, I have baked numerous 5-minute cakes; they are extremely quick, and this method allows you to make very soft desserts to enrich as you like. The 5-minute apple ring cake and the 5-minute ricotta cake are the most loved along with the yogurt batter I propose today.

I flavored the muffins with lemon, orange zest, and vanilla, but you can customize it according to your taste, as it’s a neutral base that goes well with citrus, cinnamon, bitter almond, coffee, or rum.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 cup plain yogurt (1 container)
  • 2 eggs (large)
  • 1/3 cup peanut oil (or other oil to taste or 1/2 cup soft butter)
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 1 tsp orange zest (grated)
  • 1 tsp lemon zest (grated)
  • 1/4 cup sugar sprinkles

Tools

  • 2 Bowls
  • 1 Sieve
  • 1 Hand whisk
  • 1 Muffin pan
  • 9 Paper cups large or 12 small

Procedure

  • Break the eggs into the bowl, add the sugar, and mix well with a whisk; then add the yogurt, oil, vanilla, orange zest, and lemon zest (you can replace the flavors with those you prefer), incorporating everything.

    In the other bowl, sift the flour with the baking powder and set aside.

    Gradually pour the liquid ingredients into the bowl with the solid ingredients, stirring with the whisk, to obtain a homogeneous mixture.

    Pour the batter into the paper cups inserted in the muffin pan. With this batter, you will get 9 large muffins or 12 classic ones.

    Sprinkle the surface with sugar sprinkles.

  • Bake the muffins in a preheated static oven at 350°F for about 15 minutes.

    Do the toothpick test to check the cooking; if necessary, extend it by a few minutes.

    If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.

    The 5-minute yogurt muffins are ready; let them cool completely and serve.

Tips

Storage

The 5-minute yogurt muffins can be stored at room temperature for 3/4 days under the appropriate glass dome.
