The 5-minute apple cake is a soft, simple, and wholesome dessert perfect for the whole family’s breakfast. Extremely easy to prepare, the recipe uses simple ingredients that we all have at home.

I love 5-minute cakes as they’re super quick and I always achieve great results by varying the ingredients each time depending on the season and available fruits; if you’ve never tried them, I suggest the 5-minute cocoa cake or the version with walnuts and chocolate.

Today I’m offering a classic recipe with a simple and quick method. I flavored the batter with lemon and vanilla, but you can replace the aromas with those you prefer. You can also add a teaspoon of cinnamon to the brown sugar I used to sprinkle on the apples before baking the cake, for an even tastier result.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2/3 cup peanut oil (or 6 tbsps melted butter)
  • 1/2 cup milk
  • 2 large eggs
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (grated or other preferred aroma)
  • 3 Golden Delicious apples (large, about 21 oz net weight)
  • 2 tbsps brown sugar

Tools

  • 2 Bowls
  • 1 Cake Pan springform 9.5 inches in diameter
  • 1 Whisk
  • 1 Sieve

Procedure

  • Wash the lemon thoroughly under running water, grate the zest, and set it aside.

    Wash the apples, peel them, and cut them into 1/5 inch slices, set aside (I put them in the fridge to prevent browning).

    Butter and flour the 9.5-inch pan.

  • In a bowl, whisk the eggs with sugar, add the oil, milk, vanilla, and lemon zest

    In another bowl, sift the flour with baking powder.

    Gradually pour the liquid ingredients into the bowl with the dry ingredients, stirring with the whisk to obtain a homogeneous batter.

    Transfer the batter into the cake pan. Arrange the apple slices on the batter and sprinkle with brown sugar (if you like, you can also add a teaspoon of cinnamon).

  • Bake the cake in a preheated static oven at 350°F for about 40 minutes.

    Check doneness with a toothpick, and if needed, extend the baking time by a few minutes. Be careful not to overbake to avoid drying out the cake.

    If the top of the cake tends to darken too much, cover it with aluminum foil.

    The 5-minute apple cake is ready; let it cool before removing it from the pan. Allow it to cool and serve.

Tips

Storage

The 5-minute apple cake can be stored in the fridge for 3/4 days; I prefer to keep fruit cakes in the fridge and leave them at room temperature for 30 minutes before serving.

If you want, you can also keep it at room temperature, but for no more than 2 days, as the fruit will tend to sour and change flavor.
