Strawberry cheesecake in a glass is a fresh and fragrant dessert that can be prepared in a few minutes and does not need to rest in the fridge. The recipe is very simple and consists of a base of crunchy cookies and two layers of ricotta and strawberries enriched with citrus and vanilla, an express dessert that is prepared and served, without butter and without cooking.
Strawberries are very aromatic, their flavor pairs perfectly with cheeses like ricotta, but my absolute favorite combination is pastry cream and fresh strawberries. With these ingredients, I made the strawberry and cream cups and the crumble, two simple but delicious desserts.

Instead, make the ricotta cream and store it in the fridge, then season the strawberries 15 minutes before serving the dessert and prepare the cups on the spot. In this way, you will spend very little time and serve a perfect dessert.

Ingredients
- 8 cookies (with mixed berries or other cookies of choice)
- 12 oz cow's milk ricotta (fresh)
- 1/4 cup powdered sugar
- Half teaspoon lemon zest (grated)
- Half teaspoon orange zest (grated)
- 1 teaspoon vanilla extract
- 9 oz strawberries (cleaned)
- 3 tbsp lemon juice
- 3 tbsp granulated sugar (adjust according to the sweetness of the strawberries)

Method
Wash the strawberries, dry them with a kitchen towel, and remove the green part. Cut them into regular pieces, place them in a bowl, add the juice of half a lemon and the sugar (adjust the sugar based on the sweetness of the strawberries, if they are very tart, add more), mix well and let them flavor while we prepare the ricotta cream. Stir occasionally to form a syrup.
Put the ricotta in a small bowl, add the powdered sugar, vanilla, grated lemon and orange zest, and mix everything well. The ricotta cream is ready.
Tip: Often in such recipes, you find a sweetened ricotta cream without any aroma, it is certainly optional, but if you want to give a sensation of freshness, it is essential to flavor the creams according to your taste. I used citrus zest and vanilla.
Coarsely crumble the cookies and lay them on the bottom of the glasses, then continue layering with a generous tablespoon of ricotta and one of strawberries to create four layers. Finish with a mint leaf.
