The butter cloud cookies are wonderful pastries without eggs that can be prepared in just a few minutes. The name is extremely appropriate, they are as light as a cloud and literally melt in your mouth.

Four weeks until Christmas and I want to give you lots of perfect recipes to enjoy with your guests but also to give as gifts. These days I am preparing both cookies and traditional Christmas sweets because I believe they are the most beautiful gifts to receive and to give.

I love giving family and friends a Christmas cookie box made with my own hands along with some typical sweets like the pinza or the Bolognese panone, I don’t have to spend entire days shopping risking buying useless items, they are always very appreciated and also more economical.

Today we prepare together the butter clouds, delicious small and delicate cookies. Few ingredients and 10 minutes of time are needed to make them, they are very quick both in preparation and in cooking, I flavored them with vanilla and bitter almond but you can also use other spices or citrus peels.

The only advice I can give you is to use good quality butter as it is the most important ingredient of the recipe. Here are some other Christmas ideas for you:

Ingredients

  • 9 tbsp butter
  • 1 cup all-purpose flour
  • 1/3 cup almond flour
  • 2 1/2 tbsp cornstarch
  • 1/2 cup vanilla powdered sugar
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 8 drops almond flavor
  • to taste vanilla powdered sugar (for the final dusting)

  • 1 Baking Tray

Procedure

  • Cut the butter into 1/2-inch cubes, place it in the bowl and leave it out of the fridge for 10 minutes.

    Add the flour, almond flour, powdered sugar, cornstarch, baking powder, and flavors, work everything quickly until you get a smooth and homogeneous dough.

    Form a flattened dough and place it in the fridge for 30 minutes.

  • After the resting time, form small balls, slightly bigger than a hazelnut; place them on a baking tray lined with parchment paper, keeping them spaced; put them back in the fridge until the oven is at the right temperature.

    Note: If you want to make spheres roughly of the same size easily, take the dough out of the fridge and cut small squares about 1 inch per side, then round them in your hands to form balls.

  • Bake the cookies in a preheated static oven at 300°F for about 10 minutes, they should remain white. Let them cool completely before moving them to a tray and dust them with powdered sugar.

    The butter cloud cookies are ready to be served.
