The soft apple cookies are delicious, easy, and wholesome treats that are prepared in just a few minutes. Aromatic and rich in fruit, they are perfect for breakfast, as a snack, or for a school treat.
My recipe is very simple, no need to whip anything, you just mix all the ingredients in a bowl, form with a spoon, and bake; they are the perfect cookies for those who love apple desserts that are quick to prepare, like my coconut cookies without butter, they are so good that they disappear in no time!

Ingredients
- 2 cups all-purpose flour
- 1/3 cup sugar
- 2 eggs (medium)
- 3.5 tbsps butter
- 2 tsps baking powder
- 3 tbsps milk
- 1 tsp vanilla extract
- 1 tsp lemon zest (grated)
- 1/2 tsp ground cinnamon (optional)
- 1 pinch salt
- 2 cups Golden apples (peeled and cored)
- as needed vanilla powdered sugar (for dusting)

Procedure
Preparing these cookies takes just a few minutes and it’s really simple.
Melt the butter in the microwave or in a pan and let it cool slightly.
In a bowl, mix the eggs with the sugar very well using a fork, then add the butter, milk, lemon zest, cinnamon (optional), and vanilla; combine everything. Add the flour, a pinch of salt, sifted baking powder, and mix. You should get a soft and uniform mixture.
Wash the apples, peel them, remove the core, and cut them into 1/2-inch cubes.
Add them to the dough and mix in.
Note: If the mixture seems too soft, add a tablespoon of flour, but don’t overdo it, or they’ll lose their softness; keep in mind that each flour has a different absorption capacity, so you might need to add a bit more.
Let the mixture rest for 15 minutes at room temperature.
Line a baking sheet with parchment paper, scoop the dough with a spoon, and place it on the sheet. You should get 12 cookies. Don’t worry about the weight; they’ll turn out great even if they’re not all identical.
Bake the tray in a preheated static oven at 355°F for 18-20 minutes or in a ventilated oven at 347°F for 16-17 minutes.
The soft apple cookies are ready, let them cool completely and serve them dusted with powdered sugar.
