Tips
If you don’t like seeing vanilla bean seeds in the candies, filter the cream with a fine mesh strainer before adding it to the caramel. I left them in, and I assure you they are not noticeable.
If you want to make salted caramel toffee, add a generous pinch of salt to the cream and butter mixture or use salted butter.
Do not continue cooking beyond the specified time otherwise, the candies will become hard instead of soft like classic toffees.
If you prefer hard candies, continue cooking for a few more minutes.
You can store the toffee candies at room temperature away from heat sources or in the fridge for a couple of weeks.
If you prepare them in the summer, keep them in the fridge.
