Dates stuffed with mascarpone and limoncello cream without baking and covered with white chocolate.
The mascarpone and limoncello cream has given me great satisfaction lately, because, besides being easy and quick to make, it requires no cooking or special ingredients.
It’s great for fillings because it doesn’t drip, but if you want it softer, you can add a couple more tablespoons of milk.
Instead of drinking limoncello and having to use up a nice bottle, I’ve been using it with great results in both sweet and savory recipes, always easy and quick to make.
Stuffed dates, on the other hand, will be a delicious end-of-meal or a cute gift idea, to prepare in a few minutes.
You’ll surely have some leftover cream that you can use to make cups of pandoro or panettone, arranging slices in layers and soaking them as you prefer.
Discover with me how to make them, and if you’re looking for ideas to make your holidays delicious, here below I leave you some small ideas for inspiration.

Steps
To make the Dates Stuffed with Mascarpone Cream, first prepare the mascarpone cream.
In a bowl, beat the mascarpone with the powdered sugar using an electric whisk.
Add the limoncello, milk, and continue mixing with a spatula.
Grate the zest of an untreated lemon and mix again.
Set aside in the refrigerator.
If they are not pitted, remove the pit by making a small incision on one side of the date and gently extracting the pit.
Stuff each date with the help of a teaspoon and set aside until all dates are filled.
Melt the chocolate in the microwave or in a bain-marie. Dip the dates, then drain the excess chocolate.
Let rest in the refrigerator on parchment paper, spacing the dates, until ready to serve.
