I added tomato paste, but you can also make them with the same amount of pesto or sauce of your choice, to bring different and tasty fun ideas to the table.
Already some time ago, I tried to make some savory cookies with parmesan (click on the bold words to discover this version) and I must say that both recipes are easy to make even for less experienced cooks.
For the occasion, I bought some brand-new cookie cutters that are easy to wash, obviously red, and I had a lot of fun creating many ideas that I will then give to my guests.

Ingredients
- 1 ¼ cups all-purpose flour
- tsp fine salt
- 2 ½ oz cheese (grated)
- 1 egg yolk
- 1 tsp tomato paste
- 1 tsp dried oregano (leveled)

Steps
To make the Savory Christmas Tomato Cookies, first pour the flour, grated cheese, and salt into a bowl and mix with a fork.
Then add the cold butter cut into pieces from the refrigerator and the egg yolk.
Quickly blend with your hands in the bowl to soften the butter.
Now add the tomato paste and oregano.
Mix the ingredients again and form a sandy-textured dough.
Pour the dough onto a work surface.
Work it until you form a loaf and let it rest wrapped in plastic wrap, parchment paper, or in a freezer bag, in the lower part of the refrigerator for 20-30 minutes.
After this time, take the loaf and roll it out with a rolling pin between two sheets of parchment paper.
This way, you won’t need to use more flour, and the dough will remain nice and soft, perfect for baking.
Choose your favorite cookie cutters, cut out the cookies, and arrange them on a baking sheet lined with parchment paper.
Work the dough to the end, gathering the “leftovers” together.
Bake in a preheated convection oven at 356°F for 10-11 minutes until golden.
If you want to give them as a gift, prepare them the day before and let them cool well.
Then package them in cute cardboard food boxes, with a transparent lid and a red ribbon.
