Pumpkin and potato gratin in the microwave, an easy and quick side dish to prepare, ideal for accompanying grilled or skillet-cooked meats.
I chose to use the microwave to shorten the cooking times, but at the end of the recipe, you will also find tips for preparing this delicious side dish in a traditional electric oven.
To flavor the dish, I used a homemade mix of salt and rosemary, but if you prefer, you can add the salt first and the rosemary later, after washing and cleaning it well.

For cooking, if you want to cook the recipe in the microwave, equip yourself with a dish suitable for microwave cooking (in my case, I used a Pyrex glass dish) that is the right size to hold the ingredients and to be placed in your microwave.

Ingredients
- 1.1 lbs pumpkin (Cleaned)
- 1.1 lbs potatoes (White flesh)
- 2 tbsps breadcrumbs
- 2 tbsps cheese (Grated)
- 3 tbsps extra virgin olive oil
- 2 pinches fine salt
- to taste rosemary
- 1 clove garlic

Steps
To make the Pumpkin and Potato Gratin in the Microwave first clean the pumpkin, removing the skin, filaments, and seeds.

Cut the pumpkin into rather small cubes to facilitate microwave cooking.
Wash the potatoes well if you intend to use them with the skin and cut them into small cubes, after drying them.
If you wish, you can also peel them.
Grease the bottom of the dish with a tablespoon of extra virgin olive oil and add the pumpkin and potatoes along with a clove of garlic without peel.
Pour the remaining oil and add salt and rosemary.
Add two tablespoons of grated cheese.
Finish with breadcrumbs and mix very well.
Place in the microwave and cook on maximum power for 15 minutes. My oven is set to a maximum power of 1000W
For optimal cooking, cook the side dish in stages.
After 5 minutes, stir the ingredients and continue cooking for six minutes.
If the ingredients are ready, wait a moment and remove from the oven.
If they need a few more minutes, continue until the time indicated.
In fact, cooking times may also vary based on the size and softness of the ingredients.
To ensure they are cooked, you can gently pierce them with a fork or skewer.
If it goes in easily, the side dish is ready to be served.

I don’t have a microwave oven but I would like to make the recipe, how can I cook it in an electric oven?
After preparing the ingredients, place the dish in a preheated fan oven at 356°F, cooking for 30 minutes. Always stir the ingredients halfway through cooking, being careful not to burn yourself.
