Microwave Gratinated Purple Cabbage, a unique fall side dish.
This recipe is really easy to make and, with microwave cooking, also quick to prepare.

Recently, I’ve rediscovered the microwave for cooking side dishes and small desserts, and it’s been pleasant to notice that knowing how to use one more tool in the kitchen really makes life easier.
To be precise, I was one of those who used it exclusively to reheat food or to defrost, but very, very rarely, certain ingredients.
In autumn, cabbage is one of the main ingredients in my kitchen, and below I leave you some ideas on how to use it.

Ingredients
- 1.1 lbs purple cabbage (net of waste)
- 6 tablespoons extra virgin olive oil
- Half red onion
- 3/4 cup breadcrumbs
- 1 oz cheese (grated)
- 1 pinch fine salt
- to taste rosemary (optional)

Steps
To prepare Microwave Gratinated Purple Cabbage, cut the cabbage in half and remove the core by incising it.
Slice the cabbage not too thin and rinse it several times in plenty of cold water.
Drain well.
For microwave cooking, use the crispy plate of the appropriate size for your oven or a suitable baking dish.
Evenly distribute 2 tablespoons of extra virgin olive oil on the bottom, the onion previously sliced, and, if you like, you can also add some rosemary needles.
Cook for 5 minutes at maximum power.
Meanwhile, in a bowl, mix the breadcrumbs with grated cheese, salt, rosemary (still optional).
Take the tray with the cabbage, add two tablespoons of oil and mix.
Distribute two-thirds of the breadcrumb mixture and mix, still in the chosen dish or tray. Level the ingredients and finish with the remaining cheese and breadcrumbs to complete the gratin.
Drizzle the remaining oil over the surface of the cabbage and bake in the microwave, cooking at maximum power for 10 minutes.
Check the cooking if needed and extend it by one or two minutes.
Let it cool slightly before serving.
You can prepare the tray in advance by only doing the first cooking and finish with the gratin part just before serving.
You can store in the refrigerator covered for about 24 hours.

I don’t have a microwave oven but I want to make this recipe.
Can I cook it in a traditional oven?Sure.
Clean the cabbage as I indicated above and boil it for 10 minutes in plenty of salted water.
Drain it.
Prepare the gratin.
Distribute oil, onion, and rosemary on the bottom of the dish.
Add the slightly boiled cabbage.
Proceed as above to complete the gratin part and then bake in a preheated fan oven at 375°F for 20 minutes, extending the cooking times if necessary.
