Cabbage rolls with sausage, salted ricotta, and parmesan, enriched with salted ricotta, too good and irresistible, simple to make.
A fantastic recipe inspired by a very talented colleague, Silvio, who occasionally gives me some gems to publish.
Of course, you can’t miss adding my step to personalize it, which is the addition of grated salted ricotta, a step that, for those who don’t like it, can be omitted and replaced with a pinch of salt.

Ingredients
- 8 leaves savoy cabbage
- 1 lb sausage (or sausage meat)
- 1 oz grated parmesan
- 1 oz salted ricotta (grated)
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- 1 tsp coarse salt (for the cabbage water)

Steps
To make the cabbage rolls with sausage and parmesan, enriched with salted ricotta, first take 8 nice large whole leaves from the savoy cabbage.
Blanch them for a minute, after rinsing them under cold running water, in plenty of lightly salted water.
Drain them and let them cool on a cloth or in a large colander.
Meanwhile, brown the sausage meat in a large pan, deglazing with half a glass of wine.
After about 10 minutes, turn off the heat and, after letting the sausage cool, in the same pan, add the grated parmesan and salted ricotta. Do not add salt. The ingredients are already quite savory.
Mix.
Take the cabbage leaves, cut off the tougher part of the core, and place the sausage and cheese filling in the center.
Wrap the leaves to create a roll and secure them with a toothpick.
Place the cabbage in a pan with two garlic cloves and the extra virgin olive oil.
Brown on one side for a minute over medium heat, turn and cover with a lid.
Let them brown well, turning on all sides for 5-6 minutes over low heat.
Serve the dish hot, after removing the toothpicks, with a side of your choice.
Alternative Cooking Methods
If you want to bake the rolls, place them, after forming them, in a slightly greased baking dish with oil or butter, sprinkle the surface with a little more parmesan and breadcrumbs, and bake in a preheated ventilated oven at 375°F for 15 minutes.
If you choose microwave cooking, proceed in the same manner, opting for a microwave-safe dish and cook at the highest temperature for 5 minutes in two sessions of two and a half minutes each.
Always remember to remove the toothpicks before serving the dish.
