Today a quick and easy recipe to prepare excellent fried eggplants in the air fryer. They are ideal for a super quick last-minute side dish and especially light and healthy with very little oil.
The eggplants cut into cubes cook in minutes and are perfect because they do not absorb oil.
Fried eggplants are one of the most loved side dishes. It is a typical recipe from Southern Italy. However, they are not ideal for those on a diet, as they are rich in fats and calories.
There is, however, a way to enjoy them without regrets: use a hot air fryer.

FRIED EGGPLANTS INGREDIENTS
- 1 eggplant (large)
- 1 drizzle extra virgin olive oil
- to taste salt

- 1 Air fryer
FRIED EGGPLANTS PREPARATION
Cut the eggplants into cubes of about 1.2 inches.
Put them in a bowl and pour a drizzle of extra virgin olive oil.
Mix with a spoon to distribute evenly.
Pour the eggplant cubes directly into the perforated inner basket of the air fryer.
Cook for 10 minutes at 320°F and another 5 minutes at 356°F. Stir the eggplant cubes during cooking so they are all evenly golden.
