CANDIED LEMON PEELS INGREDIENTS
- 200 lemon peels
- 7/8 cup cups water
- 7/8 cup cups sugar

PREPARATION OF CANDIED LEMON PEELS
Cut the lemon peels into your preferred size: strips, wider strips, or whole peels.
Place the peels in a bowl and cover with plenty of water to submerge them all.
Let them soak for 5 days at room temperature without covering.
This is to remove the bitterness from the peels without doing multiple boils.Drain the peels, weigh them and place them in a large saucepan.
Add an equal weight of water and sugar.Simmer gently for about 15/20 minutes until the syrup evaporates and the lemon peels are shiny and caramelized!
Spread the peels out evenly on a tray and let them dry for about 1 hour.

They can be stored for about 6 months in an airtight glass jar. They will remain soft and fragrant.
