RADICCHIO AND TALEGGIO GNOCCHI INGREDIENTS
- 18 oz potato gnocchi
- 1 head radicchio
- 5 oz Taleggio
- 1 shallot
- as needed extra virgin olive oil
- as needed salt
- as needed pepper
- 2 tbsp butter
- 1/2 cup milk

PREPARATION OF FLAVORFUL RADICCHIO GNOCCHI
Sauté the shallot in a pan with a little olive oil. Add the finely chopped radicchio, salt, and stew for about ten minutes. If necessary, add a few tablespoons of water.
Melt the butter in another pan, add the cubed taleggio and the milk, until obtaining a smooth cream. Boil the gnocchi in salted water.
When they float to the surface, drain them and add them to the taleggio cream.
Complete the dish with the radicchio and a grind of pepper.
Serve immediately.
