DUCHESS POTATOES ORIGINAL EASY RECIPE

The duchess potatoes are an easy, tasty, quick, and decorative side dish. They consist of small heaps of boiled potatoes, made with a piping bag. Slightly crispy on the outside, soft inside. Great hot, but also cold. Ideal for accompanying main dishes of any kind and for buffets. You can also cook them in an air fryer!

DUCHESS POTATOES INGREDIENTS

  • 2 lbs oz potatoes
  • 2 egg yolks
  • to taste salt
  • 2 oz oz butter (at room temperature)
  • 1.4 oz oz grated Parmesan cheese
  • 1 pinch nutmeg
  • 1 pinch pepper

Tools

  • 1 Potato Masher
  • 1 Baking Tray
  • 1 Piping Bag

DUCHESS POTATOES PREPARATION

Wash the potatoes and boil them in plenty of water.
When they are soft, drain and mash them with a potato masher.

  • Add all the other ingredients and knead until you get a soft dough.

  • Put the dough in a piping bag with a large star nozzle.
    Create small mounds of dough with a diameter of 2 – 2.5 inches on a baking tray lined with parchment paper.

  • Bake in a hot static oven at 356°F for about 15 minutes (middle part), then 5 minutes with the grill to brown the tips!

Adriana’s Advice

You can also freeze these potatoes to have them ready when needed. Put the baking tray in the freezer, and when they harden, transfer them to a food bag. When you need them, place them on a tray still frozen, then proceed with the standard baking.
