FAKE FOCACCIA WITH STRACCHINO AND CARASAU

This recipe is delicious and amazing, with a simple and quick preparation. Just layer two sheets of carasau bread with plenty of cheese in between. Here is the ready fake focaccia with stracchino and carasau. A smart recipe similar to Focaccia di Recco, but super easy and quick. Carasau bread is the typical Sardinian bread, very thin and crispy, made with flour, water, yeast, and salt.

It can be served on many occasions and is very well-received. Perfect for a quick meal, but it also lends itself to various versions and fillings. The resulting focaccia can be cut into squares and served as an appetizer along with a cocktail and some snacks.

What makes it special and irresistible is its crunchy outside and creamy inside. Try it also with salami or prosciutto and mozzarella inside. You can enrich the filling with anchovies as well.

  • as needed milk
  • 4 sheets carasau bread
  • 14 oz stracchino cheese
  • as needed coarse salt
  • as needed extra virgin olive oil
  • 5 slices cooked ham

PREPARATION FOR FAKE FOCACCIA WITH STRACCHINO AND CARASAU

Soak the carasau bread in milk and gradually place the sheets in a baking pan lined with parchment paper.

  • Distribute the stracchino cut into pieces, slices of cooked ham over the carasau bread, and cover everything with another layer of carasau bread, also soaked in milk.

  • Pour a drizzle of olive oil and salt over the surface and bake at 392°F (preheated oven) until the stracchino melts and the surface has a light golden crust.

Adriana’s Advice

You can replace the milk for soaking the bread with broth to your liking. You can also substitute the cheese with certosa, gorgonzola, or robiola.
