FREEZING CHOPPED VEGETABLES FOR SAUTÉING PERFECTLY

Frozen sauté mix is always a great convenience. Always ready and available in the freezer, perfect when we have little time. Now I’ll explain how to freeze chopped vegetables for sautéing perfectly!

Forget the idea of freezing it in ice cube trays and especially do not freeze it all together. Vegetables should be frozen separately.

The frozen chopped mix in ice cube trays browns on the outside when it comes into contact with the pan, while the rest of the cube remains frozen. So you will never have an even cooking. Therefore, the frozen chopped mix should be portioned into small amounts and not form blocks.

Furthermore, vegetables should be frozen separately so you can adapt the sauté mix to different recipes: where more onion is needed, where you want to use less carrots, etc…

INGREDIENTS FOR FREEZING CHOPPED VEGETABLES FOR SAUTÉING

  • 3 carrots
  • 4 onions
  • 3 celery (stalks)

PREPARATION FOR FREEZING CHOPPED VEGETABLES FOR SAUTÉING

Wash and dry the vegetables. Finely chop separately.

  • Spread a sheet of plastic wrap on the work surface and place the chopped vegetables in the center. You need to make a strip as long as the plastic wrap sheet with a maximum thickness of one inch.

  • Fold all the edges of the wrap and place the packages in the freezer horizontally on a flat surface.

  • This way, freezing is very quick since it is thin, resulting in less ice crystal formation. You can dose the vegetables differently for your recipes. To use the chopped mix, just break off what you need from our frozen stick, which will melt immediately in hot oil.
