INGREDIENTS MACKEREL FILLET SALAD
- 2.2 lbs mackerel (very fresh)
- to taste salt
- 2 lemons
- to taste parsley
- 2 cloves garlic
- to taste extra virgin olive oil
- 1 carrot
- to taste chili peppers

PREPARATION INGREDIENTS MACKEREL FILLET SALAD
Fill a saucepan with water, add the carrot halved, a bunch of parsley, and 1 lemon cut into pieces. Bring to a boil, let simmer for 5 minutes, then immerse the mackerels (already gutted and cleaned) for 10 minutes.
Drain them, let them cool slightly.
Clean the fish by removing the central bone, the head, and all bones. As you clean the mackerels, lay the fillets on a serving dish.
Prepare a citronette with the strained lemon juice, extra virgin olive oil, finely chopped bunch of parsley, chopped garlic, and chili pepper.
Pour the citronette over the mackerel fillets, mix and let rest for about an hour.
Serve the mackerel fillets accompanied with lettuce or the vegetables you prefer.
