KUMQUAT JAM INGREDIENTS
- 2.2 lbs kumquat
- 2.5 cups sugar
- 1 lemon (zest and juice)

KUMQUAT JAM PREPARATION
Wash the mandarins well. Soak the kumquats in water for 24 hours to soften the peel and eliminate that slight pungent taste.
Cut them in half, remove the seeds, and place them in the pot where they will cook.
Add the sugar, lemon juice with its zest.Let sit for at least an hour so that by macerating in the sugar, they release a bit of liquid.
Cook for half an hour. Blend until you have the consistency you prefer. (not too dense because the cooking will continue under the blanket).
Pour into sterilized and dry jars, close the lid, invert, and let cool slowly under a blanket until the next day. Here’s this delicious jam ready!

You can add spices like cardamom or cinnamon to the jam if you wish. Anise also works well! Let your imagination run wild.
