Makhmar is a typical dish of Moroccan cuisine, essentially a leavened dough cooked in a pan. I was thrilled with it also because they are ideal for filling as desired and can be prepared in advance. Indeed, a very versatile recipe useful for a cold dinner, ideal for children, great for parties.

MAKHMAR INGREDIENTS
- 5 oz semolina flour
- 5 oz all-purpose flour
- 7 oz water (lukewarm)
- 0.35 oz fresh yeast
- to taste salt

MAKHMAR PREPARATION
Dissolve the yeast in lukewarm water and then add the two types of flour alternately. Knead vigorously for a few minutes, adding the salt.
Let it rise for about 4 hours, then spread it on a work surface that had been previously dusted with semolina flour.
Divide the dough into 6 balls, then roll them into discs about the thickness of a finger, preferably with your hands. Heat an empty pan, and when hot, place the first disc on the pan and cook for a few minutes.
For cooking:
1st side: 1 minute
2nd side: 1 minute
1st side: a few seconds
2nd side: a few seconds
etc. etc. until they appear well puffed and golden.Let them cool and cut, fill as desired. In my case, I used a ratatouille of eggplants, zucchinis, and peppers.

You can also freeze them and always have them ready when needed. Just defrost and reheat them in the pan or in the toaster.
