A simple and satisfying main course perfect for any occasion: mezze maniche with burrata, basil, and sausage. It’s a delicate main dish that everyone will love!
Easy and quick to prepare, even at the last minute.
The preparation is very simple, requiring only a few ingredients, but the result is truly amazing. It will be a great idea to offer to your family or guests, whether during a daily lunch or for a classic Sunday lunch.
MAKE SURE to prepare the basil cream just before mixing, otherwise the basil tends to oxidize easily and lose its beautiful green color!
For this recipe, I used Armando’s whole grain mezze maniche included in this month’s Degustabox.

INGREDIENTS FOR MEZZE MANICHE WITH BURRATA, BASIL, AND SAUSAGE
- 10.5 oz mezze maniche rigate
- 4 burrata
- 7.8 oz basil
- 9.9 oz sausages
- to taste extra virgin olive oil
- to taste salt
Equipment
- 1 Wok
PREPARATION OF MEZZE MANICHE WITH BURRATA, BASIL, AND SAUSAGE
Start the preparation by removing the outer casing of the sausage and crumbling it very finely, or you can also cut it into small pieces. Brown the sausage in the wok. Set aside when it becomes crispy.
Boil the pasta in plenty of salted water and meanwhile blend two-thirds of the burrata with basil, salt, and oil.
Drain the pasta al dente and pour it into the wok where you will add the basil cream and the sausage set aside.
Plate and decorate with more basil and the remaining shredded burrata.
Adriana’s Tip
You can add a pinch of chili pepper if you prefer and make sure to prepare the basil cream just before mixing, otherwise the basil tends to oxidize easily and lose its beautiful green color!
