Baked mortadella rolls, or stuffed mortadella in sauce, is a typical recipe from Puglia. Very quick and with just a few ingredients!
With baking, a delicious crust forms that makes the dish irresistible.
Mortadella is an extremely versatile product in the kitchen and is used in various preparations. For this recipe, I used Agromonte Cherry Tomato and Basil Ready Sauce included in this month’s Degustabox.
You can fill these rolls however you like. Here are some ideas:
Potato filling: boil the potatoes. Add grated cheese, an egg, chopped parsley and garlic, salt and pepper, and if you like, a melting cheese.
Meat filling: make classic meatballs and stuff the rolls by adding a melting cheese or mozzarella.
Mushroom filling: sauté about 300 g of mushrooms and fill by adding melting cheese and parsley.
Cheese filling: choose soft cheeses, chop everything, and add an egg and Parmesan.
Stuff the rolls.

MORTADELLA ROLLS INGREDIENTS
- 8 slices mortadella (thickness 1/16 inch.)
- 3 eggs
- 1/3 cup grated Parmesan
- to taste parsley
- to taste milk (to soften the bread)
- 1 1/4 cups tomato sauce
- 1 clove garlic
- to taste extra virgin olive oil
- to taste stale bread

PREPARATION OF MORTADELLA ROLLS
First, prepare the sauce: sauté a clove of garlic and then pour the tomato sauce. Cook adjusting salt and pepper.
In a bowl, mix eggs, salt, pepper, parsley, stale bread softened in milk and squeezed, and cheese. Mix everything well until you get a homogeneous mixture.
Take the mortadella and place a spoonful of filling in the center of each slice. If you like, you can add a piece of cheese to create a melting heart. Roll up.
Add some sauce to the bottom of the dish. Arrange all the rolls and cover with more sauce and grated cheese.
Bake at 350°F until gratin (about 20-25 minutes).
