NEAPOLITAN COD FRITTERS

Cod fritters, or more precisely cod pizzelle, are a tasty appetizer typical of the Neapolitan tradition. They are generally prepared during the Christmas holidays, especially for Christmas Eve dinner, but there’s nothing against including them in any fish menu.
They are made of leavened dough with a heart of cod pieces. They always disappear in a flash!

COD FRITTERS INGREDIENTS

  • 1 1/4 cups semolina flour
  • 1 1/4 cups all-purpose flour
  • to taste pepper
  • to taste salt
  • 1 1/8 cups water
  • 2 1/2 tsp fresh yeast
  • 1 lb cod (soaked)

COD FRITTERS PREPARATION

  • Remove the skin and bones from the cod.

  • Place it in boiling water and cook for 6-7 minutes or steam it.

  • Chop it into various pieces.

  • Meanwhile, in a bowl pour the flours, yeast, water and mix with a fork until you get a smooth and homogeneous batter.

  • Add salt and pepper and the pieces of cod.

  • Knead vigorously with the fork. Cover with kitchen plastic wrap.

  • Let rise until the dough has tripled in volume.

  • Fry the fritters in plenty of hot oil, trying to shape the dough into balls, using a spoon and wetting it with water to prevent the dough from sticking.

  • Lightly brown them, turning them a couple of times.

  • Place on absorbent paper to remove excess oil.

  • Serve the cod fritters.

You can also add some chopped olives to the fritter batter or some anchovy fillets in oil. This same batter is also perfect for incorporating boiled cauliflower or broccoli.
