Making cookies at home is fun, very easy, and above all, we know exactly what’s inside. They are more economical and we can also customize them! Today I propose the recipe for oat and buckwheat cookies. Simple, egg-free, healthy, and perfect for breakfast accompanied by jam. They keep for a long time and are a burst of goodness!
Also try the buckwheat crepes, buckwheat pan brioche or the rustic buckwheat focaccia. Many recipes, each more delicious than the last!
I enjoyed them with the delicious Fiordifrutta strawberry jam from Rigoni di Asiago contained in this month’s Degustabox. Single-serving packages, practical and tasty.

INGREDIENTS FOR OAT AND BUCKWHEAT COOKIES
- 3/4 cup buckwheat flour
- 3/4 cup oat flour
- 1/4 cup brown sugar
- 7 tbsp butter
- 2 tbsp milk
- 1 tsp baking powder
Tools
- 1 Cookie Cutter
PREPARATION OF OAT AND BUCKWHEAT COOKIES
In a bowl, mix the oat flour and buckwheat flour. Add the sugar and then the butter. Start kneading the mixture and then add the milk.
Form a dough ball and wrap it in plastic wrap, then refrigerate for an hour. Take the dough out of the fridge, roll it out with a rolling pin on a floured surface to about 1/8 inch thick.
Use a cookie cutter of any shape you desire to cut out the cookies. Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F for about 10/15 minutes.
The cookies should be golden. Remove from oven and let cool.
Adriana’s Advice
