INGREDIENTS FOR OCTOPUS AND CHERRY TOMATO SALAD
- 2.2 lbs octopus
- to taste salt
- 14.11 oz yellow cherry tomatoes
- to taste basil
- to taste extra virgin olive oil
- to taste chives
- to taste green olives (pitted)

PREPARATION FOR OCTOPUS AND CHERRY TOMATO SALAD
Boil the octopus in plenty of boiling water.
Let it cook for 45 minutes over low heat; it should simmer gently. After this time, let the octopus rest for at least 30 minutes in its cooking water, then drain it and let it cool completely.
At this point, cut the cherry tomatoes into small pieces and transfer them into a large bowl.
Add the olives, oil, salt, chopped chives, and fresh basil leaves.
Cut the cold octopus into pieces and add it to the other ingredients, mix everything and let it rest in the fridge.
