INGREDIENTS FOR PACCHERI WITH MUSHROOM, WALNUT, AND SPECK CREAM

  • 7 oz Paccheri
  • to taste Salt
  • to taste Parsley
  • to taste Parmigiano Reggiano DOP
  • to taste Extra virgin olive oil
  • 1 clove Garlic
  • 3 oz Speck (diced or in strips)
  • 10 Walnuts
  • 5 oz Porcini mushrooms

Preparation of Paccheri with Mushroom, Walnut Cream

  • Peel the garlic clove.

  • Slice the porcini mushrooms or you can use frozen ones.

  • Pour a drizzle of EVOO in a pan and sauté the garlic over medium heat.

  • When it starts to brown, add the porcini mushrooms. Season with salt and pepper. Cook over medium heat for 4-5 minutes. Then remove the garlic.

  • In a pan, brown the speck over medium heat. Set aside.

  • In a large pot, pour water and bring to a boil. Add salt and cook the paccheri.

  • Meanwhile, take some of the mushrooms and put them in a container. Add some pasta cooking water and blend with an immersion blender.

  • Pour the cooked paccheri into the pan with the remaining mushrooms, let it absorb the flavors, then add the mushroom cream, crispy speck, and walnut pieces.

  • Mix everything together with some Parmesan and add more pasta cooking water if needed to create a delightful cream.

  • Serve the paccheri hot with chopped parsley.
