SCENTED AND DELICIOUS LEMON ECLAIRS

The éclairs are French pastries that are very easy to prepare and super tasty. Based on elongated choux pastry. Today, here is the super fresh and delicious lemon version! Lemon Eclairs!
If there is a dessert that cannot be missed in a nice assortment of pastries or on a tray of pastries, it is the éclair in many beautiful variations!

LEMON ECLAIR INGREDIENTS

  • 1/4 cup water
  • 1/4 cup milk
  • 3.5 tbsp butter
  • 1 pinch salt
  • 2 pcs eggs
  • 3/4 cup all-purpose flour
  • Half lemon curd
  • 3/4 cup whipping cream
  • to taste white chocolate
  • to taste lemon peel (candied)

LEMON ECLAIR PREPARATION

Bring to boil in a saucepan the milk, water, butter, and a pinch of salt.

  • When the mixture boils, add the flour to the saucepan all at once.

  • Continue stirring until the flour is absorbed, forming a thick dough. Stir on the fire for 2/3 minutes.

  • Remove the dough from the pot and place it in a bowl, stirring with a wooden spoon, and keep turning it until it has cooled almost completely. Once the dough has cooled, add the eggs one at a time. Continue kneading until a homogeneous mixture is obtained.

  • Put the dough into a piping bag with a star or smooth nozzle with a 10 mm hole, and form strips 4 inches long directly into the basket of the air fryer covered with a sheet of parchment paper. Be careful to leave some space between each sweet as they will puff up during cooking.
    Bake for 15 minutes at 356°F then raise to 392°F for another 7/8 minutes. Let cool.

  • Meanwhile, prepare the cream by mixing the whipped cream with the lemon curd. For consistency and taste, adjust according to your preference, whether you want a more or less pronounced lemon flavor.

  • Cut the eclairs in half lengthways. Fill with the cream. Decorate with melted white chocolate and pieces of candied lemon peel.
