INGREDIENTS SICILIAN STYLE DRIED PEPPERS IN OIL
- 4.5 lbs sweet peppers
- as needed salt
- as needed dried oregano
- A few cloves garlic
- 2 cups corn oil
- 2 cups water
- 2 cups white wine vinegar

PREPARATION SICILIAN STYLE DRIED PEPPERS IN OIL
First, wash the peppers and remove the stalk and the seeds inside.
Cut them in half or in three parts, they must remain well open, salt them and distribute them on the different trays of the dehydrator.
Set the dehydrator to 140 degrees for about 36 hours. Check because the time may vary depending on the size and thickness of the peppers.
When they are well dry and crispy, prepare a solution of water and vinegar in a 1:1 ratio. Bring to a boil and dip the peppers for 5 minutes.
Drain them, dry them well (you can also put them back in the dehydrator at 104 degrees for about 30 minutes) and then jar them, covering with oil and spices.
