Today I offer you Crinkle Pumpkin Cookies that are delicious and very easy to make. Slightly and delicately spiced, with a crunchy crust on the outside and soft inside. Ideal to enjoy with a tea, coffee, or a nice big glass of milk.
This recipe is also ideal for using up some pieces of pumpkin that always end up left in the fridge. Simple ingredients, often already present in the kitchen, for rustic-tasting cookies.

INGREDIENTS FOR SOFT CRINKLE PUMPKIN COOKIES
- 10.5 oz pumpkin (already cleaned and chopped)
- 2 eggs
- 7 tbsp butter (soft)
- 1/2 cup sugar
- 3 3/4 cups all-purpose flour
- 1 packet baking powder
- 1 tsp ground cinnamon
- 1 cup plain yogurt

PREPARATION OF SOFT CRINKLE PUMPKIN COOKIES
Cut the pumpkin into pieces, put it in a saucepan with 2 tablespoons of sugar and half a glass of water. Cook for 15 minutes and when cooked, mash with a fork to get a puree, then drain it in a colander.
Put the pumpkin puree, eggs, soft butter in a bowl and work with a fork. Add sugar, cinnamon, yogurt and mix. Add the flour and baking powder. Work with your hands and if the dough is still too soft, add more flour.
Form a dough.
Take a bit of dough at a time and make balls with your hands. Roll them in powdered sugar.
Place on a baking sheet lined with parchment paper and bake for about 20 minutes in a preheated static or ventilated oven at 392 degrees. You can also cook them in the air fryer.
Adriana’s Tip
To make the cookies even more delicious, you can add chocolate chips to the dough or some chopped nuts. Grated orange zest also goes wonderfully!
