STRACCIATELLA IN BROTH GRANDMA’S LITTLE SOUP

Stracciatella in broth, also known as Roman-style stracciatella, is a winter dish typical of Emilia-Romagna, Marche, Abruzzo, and Lazio. It is a tasty grandma’s little soup, a true comfort food or rather an egg soup in broth called stracciatella because of its shredded appearance.

A simple, very easy recipe and ideal to enjoy on cold winter days. It is a dish probably created to reuse leftover broth. The result is still a very tasty soup. A light and inviting dish, ready in a few minutes. Low-calorie, suitable for a diet or for those who want to keep it lighter after the festive feasts. For the broth, you can use the classic beef or chicken.

A dish that will take you back to your childhood. Just its aroma takes my mind back to grandma’s kitchen on cold winter evenings, when the steam from making this recipe fogged up the kitchen windows. In short, it’s certainly a unique dish of the humble peasant tradition.

  • 4 eggs
  • 1 l beef broth
  • to taste salt
  • to taste nutmeg
  • 80 g Parmigiano Reggiano PDO (grated)

PREPARATION OF STRACCIATELLA IN BROTH

In a bowl, beat the eggs with the Parmigiano and adjust the salt and nutmeg.

  • This mixture is then poured into the boiling broth and quickly mixed with a fork or hand whisk. Reduce the heat and cook for 2-3 minutes.

  • After this time, turn off the heat and ladle the stracciatella into the plates. You can finish with a grind of pepper.
