Spinach and Egg Nests in Air Fryer

Today I present to you a healthy, tasty, and scenic idea to bring to the table in a few minutes, Spinach and Egg Nests in the Air Fryer.
A complete dish full of nutrients, ideal for a savory breakfast, brunch, lunch, or a light but flavorful dinner.
The Air Fryer allows us to achieve a golden and even cooking without the need for excess oil: the result is a light but irresistible dish, with slightly crispy spinach and a creamy egg yolk in the center.

Preparing the eggs in the Air Fryer is really convenient, just keep an eye on the cooking if it’s your first time, as the times may vary slightly from fryer to fryer.

For this Spinach and Egg Nests recipe, I wanted to make the spinach slightly crispy before adding the egg, but if you prefer and want to speed up the process even more, you can skip this step and cook the nests with the eggs immediately.

Ingredients for 2 servings of Spinach Nests with Eggs in Air Fryer

  • 12 oz spinach (fresh)
  • 1 clove garlic
  • to taste extra virgin olive oil
  • 2 tbsps Grana Padano cheese, grated
  • to taste salt
  • to taste pepper
  • to taste nutmeg

  • 1 Air Fryer
  • 1 Spoon
  • 1 Strainer

Steps

How to Prepare the Spinach Nests with Eggs in Air Fryer

  • After thoroughly washing the spinach, place them in a large pan with a garlic clove and a drizzle of extra virgin olive oil. Cover with a lid and let them wilt over medium heat, stirring a couple of times. It will take a few minutes

  • Remove the garlic clove, drain the spinach, and squeeze them to remove the water that was released during cooking

  • Transfer them to a bowl and cut them with scissors or, if you prefer, on a cutting board with a knife

  • Add salt, pepper, grated Grana or Parmesan cheese, and nutmeg to taste

  • Mix well with a spoon to combine all the ingredients

  • Take a non-stick baking tray, lightly grease it with a little extra virgin olive oil, and form two mounds with the spinach. Using the back of a spoon, create an indentation and use your hands to shape the edges. Give a few sprays of oil

  • Insert the tray and cook the spinach nests for 10 minutes at 392°F in the air fryer

  • At the end of cooking, remove the tray and place the egg in the center

  • Put the tray back in the air fryer and cook now at 356°F for about 7/8 minutes until the egg white is set, leaving the yolk soft

  • With the help of a wooden or silicone spatula, gently transfer the nests to the plate. Salt and sprinkle with pepper to taste

  • Now you can savor the spinach nests with eggs… prepare plenty of bread to dip in the yolk 😋

Tips and Variations

If you use frozen spinach, make sure to defrost and squeeze them well to prevent excess water during cooking.

You can add a slice of pancetta or cooked ham to make them even tastier before adding the egg

If you prefer soft spinach, you can skip the first cooking step, inserting the egg immediately and cooking directly at 356°F for 7/8 minutes

If you don’t have an air fryer, you can prepare the spinach and egg nests in a pan covered with a lid
