Today 4 cold appetizers ready in 10 minutes, actually simple cost-effective finger food recipes to set up a small buffet of savory recipes without cooking that are very tasty and quick… as long as you don’t have 40 people for dinner because clearly, time extends significantly, hehe!

I’m not giving you precise quantities, just the pairings for these cold appetizers ready in a few minutes, and I’ll also suggest other easy ideas for quick cold snacks that can be made in just a few minutes.
Cold appetizers for the buffet are definitely a course I love because we can use many cooked and raw ingredients, lots of vegetables, many cold cuts to prepare very quick cold appetizers and impressive yet economical ones!

Ingredients

  • as needed celery
  • as needed robiola cheese
  • as needed salmon roe
  • as needed extra virgin olive oil
  • as needed salt and pepper
  • as needed Abate pear slices
  • as needed sweet gorgonzola (creamy)
  • as needed heavy cream (optional)
  • as needed arugula
  • as needed prosciutto
  • as needed emmentaler (or gruyere)
  • as needed sun-dried tomatoes in oil
  • as needed basil
  • as needed buffalo mozzarella balls
  • as needed speck
  • as needed thyme
  • as needed extra virgin olive oil
  • as needed salt and pepper

FOR PREPARING THE RECIPE 4 COLD APPETIZERS READY IN 10 MINUTES

  • Remove the strings from the celery and cut it into chunks.

    Put the robiola cheese in a bowl and season it with salt, pepper, and a drop of Evo oil, mixing the mixture well.

    Dry the vegetable chunks and fill them with a spoon or piping bag with the seasoned cheese.

    Add some salmon roe and keep the appetizer covered with plastic wrap in the refrigerator until it’s time to serve.

  • Wash the Abate pear and slice it, removing seeds and core.

    Mix the gorgonzola with a little cream to make it creamy, then fill the pear’s hollow.

    Place 1/2 stalks of arugula and wrap each fruit slice in prosciutto.

    And here is the second cold appetizer, and as always, cover with plastic wrap, leaving in the refrigerator until serving time.

  • More than quick… just cut 2 x 2 cm cubes of emmentaler or gruyere, place a strip of well-dried sun-dried tomato in oil blotted with kitchen paper, add a fresh basil leaf and… voilà!!

    Guess what??? Always cover it with plastic wrap and… ^_^!

  • Drain and dry the buffalo mozzarella balls from their whey.

    Wrap each in half a slice of speck and skewer with a toothpick.

    Prepare a sauce as a dressing made with Evo oil, salt, pepper, some thyme leaves and drizzle over the mozzarella balls for flavoring.

    Cover with plastic wrap and refrigerate until it’s time to set the table and prepare the various dishes of the savory buffet with 4 cold appetizers ready in 10 minutes.
