Creamy Bucatini with Feta and Datterini

The creamy bucatini with feta and datterini is the recipe for a simple first course WITH ONLY 2 INGREDIENTS and quick because you just need to put yellow and red datterini cherry tomatoes in a pan with a nice block of Greek feta cheese while cooking the pasta in boiling salted water, then combine the two and the dish is ready to be eagerly enjoyed with a sprinkle of dried oregano!

I confess I eyeballed the ingredients a bit because these ingredients go very well together and an extra or missing 10 grams won’t make it any less tasty!

I also used datterini cherry tomatoes which are sweeter than other tomatoes and I always keep a good supply in the fridge to make fresh summer mixed salads with added cheeses like primosale, hard-boiled egg, tuna!

Ingredients for creamy bucatini with feta and datterini

  • 2 cups datterini cherry tomatoes (for me mixed yellow and red)
  • 7 oz feta
  • 7 oz bucatini
  • to taste dried oregano
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste chili pepper (for me in flakes)

As mentioned above the RECIPE OF CREAMY BUCATINI WITH FETA AND DATTERINI can be made in the oven or on the stovetop; times vary but the final result of this amazing first-course recipe does not change!

Steps

  • 1) I wash and quarter the yellow and red datterini cherry tomatoes and place them in a baking dish lightly brushed with extra virgin olive oil;

    2) I also add the Greek feta whole or crumbled (the time needed to soften changes but nothing else) and season with lots of oregano and a little pepper and salt: be careful with saltiness because Greek feta has a strong, piquant flavor!

    3) I bake the dish for the creamy bucatini recipe, cooking the tomatoes and softening the feta for about 15–20 minutes.

  • 4) Gradually the typical Greek feta will become soft and the datterini will start releasing their juices.

  • 5) Meanwhile, put a pot of salted water on the heat and when it boils add the pasta, cooking it al dente and draining it while still slightly moist;

    6) immediately pour it into the baking dish and adjust salt and pepper, keeping it and flavoring it with crushed red pepper flakes, the datterini and the feta.

    7) The creamy bucatini with red and yellow datterini and feta are a very tasty first course with an inviting and savory flavor — serve immediately and enjoy together!
