FOR THE PREPARATION OF THE DICED CHICKEN AND POTATOES IN THE OVEN RECIPE
First, I peel and dice the potatoes into pieces about 1/1.5 cm.
I proceed the same way by removing the inner bone of the chicken breast and then cutting it into bites of the same size.
Line the pan with parchment paper and preheat the oven to 375/400°F in static mode.
Place all the chicken and potato bites in a baking dish and add the finely chopped herbs of your choice.
Mix well so that the ingredients are covered by the spices to have intense aromas and flavors during cooking.
Arrange the chicken and potatoes in the pan preferably in a single layer, and add salt, pepper, and a bit of extra virgin olive oil.
Bake and let cook for about 25/30 minutes, checking halfway through and stirring it all for as even cooking as possible.
Both the chicken and the potatoes will become golden and well-gratinated with a definitely inviting and delicious crust.
Once cooked, check the seasoning and serve immediately.
