Hasselback Chicken

Hasselback Chicken is a dish named after a Swedish restaurant that invented this accordion-style cut, which is well known especially for potatoes.

Hasselback chicken is a juicy and impressive main course inspired by the famous accordion-style cut from Sweden. The chicken breast is sliced without cutting it all the way through and stuffed with cheese, vegetables or cured meats, becoming tender and flavorful after baking. A simple but striking recipe, perfect for a dinner that’s a little different than usual.


🔎 Note: do not wash the chicken before cooking. It is essential to cook it completely so that the heat eliminates any bacteria.
PAY ATTENTION TO COOKING which must be done properly so that the heat penetrates the meat and destroys its bacterial load. Escherichia coli is killed by temperatures above 176°F, heat that also destroys any toxins produced.

One method not to use for this type of meat is the microwave oven because heating the meat is not done evenly and this does not ensure the meat is safe to eat.

Variations
Instead of prosciutto crudo you can use speck; instead of grilled zucchini you can add arugula whose slightly bitter taste works well; and instead of scamorza you can use Asiago and/or mozzarella… The dish is simple but very tasty and I believe children at home will like it too!

  • 1 chicken breast
  • to taste prosciutto (cured ham)
  • to taste grilled zucchini (I had them in the fridge!)
  • to taste scamorza cheese
  • to taste extra virgin olive oil
  • to taste thyme or oregano
  • to taste salt and pepper

Preparation RECIPE HASSELBACK CHICKEN

  • Clean the chicken breast of cartilage and streaks of fat and cut it in half.

    On each half make decisive cuts without slicing through the chicken meat.

  • Make additional cuts about 3/8 inch (1 cm) apart along the entire length of the piece of meat.

  • In each slit put the prosciutto, the zucchini and the scamorza.

    Salt, pepper and add a little extra virgin olive oil.

  • Place the Hasselback chicken on a baking tray lined with parchment paper and bake in a preheated oven at 356°F for about 30 minutes or depending on the characteristics of your appliance.

  • Cook the Hasselback chicken to perfection so the breast remains moist and succulent.

  • Plate the servings adding the pan juices that formed during cooking, add a sprig of thyme and serve while still steaming, allowing the juices to redistribute in the meat so it remains moist and delicious!

  • Serve with boiled potatoes, gratinated tomatoes, grilled zucchini (oops… I made a lot yesterday) or a very simple seasonal salad!
