I didn’t have much time for the meal today and looking in the fridge I saw I needed to use up a rectangular roll of puff pastry and some diced cooked ham, so I decided to make a savory pie: an easy savory pie with eggplant, cooked ham and mozzarella.
As soon as it was warm I took a bite and I must say it’s not just good but much, much more; I had a hard time keeping some slices to let the super food critic at home taste it — namely the teenage son!
I sprinkled sesame seeds on the surface of the pastry after lightly wetting it with water, but you can also use poppy seeds, which are crunchy and might be even better! I used a generous amount, for example 4 1/4 oz of diced cooked ham — maybe it’s too much but I certainly didn’t want to have other leftovers to deal with, so melius abundare quam deficere — ha ha….
I suggest other savory pies or puff pastry ideas that are great as alternative dinners or, cut into small squares, as appetizers like….

EASY SAVORY PIE WITH EGGPLANT, COOKED HAM AND MOZZARELLA

Ingredients for EASY SAVORY PIE with eggplant, cooked ham and mozzarella
- 1 roll Puff pastry (rectangular)
- 2 eggplants (long variety)
- 4 1/4 oz diced cooked ham
- 1 1/8 cups mozzarella, julienned
- 5 datterini tomatoes (sliced)
- to taste sesame seeds (or poppy seeds)
- salt

Preparation for EASY SAVORY PIE with eggplant, cooked ham and mozzarella
Wash, trim and slice the eggplants thinly.
Grill them on a very hot griddle for the needed time and then place them in a container.Preheat the oven to 374°F. Unroll the puff pastry and place it in the baking pan using the parchment paper from the package.
Place the grilled eggplant slices in the central part of the rolled-out pastry.
On top add the mozzarella and the diced cooked ham.
Wash and cut the datterini tomatoes into small rounds and scatter them over the savory pie.
Overlap the two non-filled side parts of the puff pastry, slightly crossing them and wetting a bit with water to help the layers stick together.
Very lightly wet the surface of the easy savory pie with eggplant and mozzarella and sprinkle with sesame seeds.
Bake in a hot oven for about 30/35 minutes until the savory pie is nicely golden. Let it cool slightly and serve this delicious layered focaccia! Enjoy your meal… See you soon! Annalisa
