EASY SAVORY PIE with Eggplants Ham and Mozzarella

Today I don’t have much time for a meal, and looking in the fridge, I saw I need to use up a rectangular sheet of puff pastry and some diced cooked ham, so I decided to make a savory pie, an easy savory pie with eggplants ham and mozzarella.

When it was just warm, I took a bite, and I must say it was more than just good, and I struggled to save some slices for the house’s super food critic, that is, my teenage son!

After slightly moistening the surface of the puff pastry with water, I added sesame seeds, but you can also use poppy seeds that, being crunchy, might be even better! I was generous with the quantities, for example, 120 grams of diced cooked ham might be too much, but I didn’t want to end up with other leftovers, so it’s better to have too much than not enough, eh eh….

I suggest other excellent savory pies or puff pastries as alternative dinners or, when cut into small squares, appetizers like….

Ingredients EASY SAVORY PIE WITH EGGPLANTS HAM AND MOZZARELLA

  • 1 sheet Puff Pastry (rectangular)
  • 2 eggplants (long ones)
  • 4.2 oz diced cooked ham
  • 4.6 oz shredded mozzarella
  • 5 cherry tomatoes (sliced)
  • to taste sesame seeds (or poppy seeds)
  • salt

FOR THE PREPARATION OF THE EASY SAVORY PIE WITH EGGPLANTS HAM AND MOZZARELLA

  • Wash, trim, and slice the eggplants thinly.
    Grill them on a hot plate until ready, then place them in a container.

  • Preheat the oven to 375 degrees F. Unroll the puff pastry and place it in the baking pan with the parchment paper from the package.

  • In the center of the rolled-out pastry, place the grilled eggplants.

    On top, add the mozzarella and the diced cooked ham.

    Wash and cut into small rings the cherry tomatoes and scatter them over the pie.

  • Overlap the 2 unfurnished lateral parts of the puff pastry by slightly crossing them and dampening them with a bit of water to help the 2 layers stick together.

    Lightly moisten the surface of the easy savory pie with eggplants ham and mozzarella and sprinkle with sesame seeds.

  • Bake in a preheated oven for about 30/35 minutes until the savory pie is nicely golden… Let it cool slightly and serve this delicious puff pastry focaccia! Enjoy your meal…. See you soon! Annalisa
