LEMON AND HERB MARINATED CHICKEN SKEWERS

Lemon and Herb Marinated Chicken Skewers are a light and very tasty main course that lends itself to many variations with different aromatic herbs and various spices.

I left the chicken cubes to marinate for about an hour but you can do everything in the morning and enjoy the dish at dinner time when the whole family sits down at the table to eat and share the stories of the day.

The white meat skewers were cooked in the oven, but if you prefer you can cook them on a hot grill or in a pan…

The chicken cut used is the chicken breast, but if you prefer and have time you can also debone the poultry thighs…

The lemon juice that is part of the marinade ingredients will “cook” the meat, so the cooking times will be lower…

As aromatic herbs I used parsley, basil, chives, but you can add oregano and thyme…

As spices I added chili and paprika, but you can also add fresh grated ginger…

Since the dish is light, I accompanied it with some crudités….

DON’T FORGET A PRECAUTION… if you use the grill as a cooking method, before cooking, soak the skewers in water, so they won’t burn during cooking!!

Ingredients RECIPE LEMON AND HERB MARINATED CHICKEN SKEWERS

  • 4 chicken breasts (boneless and skinless)
  • 1 lemon (juice)
  • 5 tablespoons extra virgin olive oil
  • 1 clove garlic (minced)
  • to taste chili pepper (fresh or dried)
  • to taste chives (chopped)
  • to taste parsley (chopped)
  • to taste basil (chopped)
  • to taste paprika (for me sweet)
  • to taste salt and pepper

FOR THE PREPARATION OF THE RECIPE LEMON AND HERB MARINATED CHICKEN SKEWERS

  • In a bowl, mix the chopped herbs, spices, extra virgin olive oil, and lemon juice.

  • Now add the chicken cubes cut as evenly as possible and mix everything well.

  • Cover with plastic wrap and let marinate in the fridge for at least 1 hour, but preferably longer if possible!

  • After resting time, use disposable gloves and prepare the skewers by threading each meat cube without pressing them too close to each other.

  • Then place the flavored chicken skewers on a tray and bake in a preheated oven at 390°F for about 10/12 minutes, or depending on your appliance’s characteristics.

  • During cooking, turn the chicken meat skewers to ensure even cooking and be careful not to overcook them to prevent them from drying out…

  • A simple and light main course that you can accompany with fresh vegetables, boiled potatoes with parsley, various purées, grilled vegetables…
