The oven-baked sliced potatoes with garlic and thyme are a simple, crispy and aromatic side dish perfect for accompanying many meals.
At my house, and I repeat myself, potatoes are always a hit: whether mashed into a silky purée with a pinch of nutmeg, simply boiled and tossed with finely chopped parsley, or oven-roasted, they often appear on our plates and never fail to please.
This version, with the potatoes sliced, seasoned with garlic and scented with thyme, is a straightforward but really tasty side dish — ideal to bring to the table when I want something crunchy and flavorful without too much effort.
These roasted potatoes flavored with garlic and thyme are very versatile: they pair wonderfully with roasted meats, chicken or grilled steaks, but they are equally great alongside an oven-baked fish such as gilt-head bream or sea bass, or a simple salmon fillet.
They also work perfectly with a cheese board of mixed cheeses or a vegetarian plate, because their aroma and crispy crust go well with any course.

Ingredients
- 5 potatoes (medium/large)
- 2 cloves garlic (whole or chopped to taste)
- as needed extra virgin olive oil
- as needed thyme (fresh preferred, if not available… dried!)
- to taste salt

Procedure
So then… I wash the potatoes well, dry them, and then slice them about 1 cm thick (about 3/8 inch).
With a very sharp knife I make small diamond-shaped cuts on them so they cook faster and become even crispier!
I line the baking tray with parchment paper and arrange the slices without overlapping, in a single layer, neatly spaced.
In a small bowl or a glass I mix oil, salt and pepper and also the garlic, very finely chopped by knife or in a mixer.
I brush the potato slices with this tasty emulsion and add a few fresh thyme leaves as well.
All that remains is to bake in a preheated conventional oven at 392°F for about 25–30 minutes, taking care to flip the slices halfway through the cooking time.
Now that they are tender and juicy, I serve the oven-baked sliced potatoes with garlic and thyme at the table.

Tips
If you don’t like thyme, substitute it with rosemary or sage.
