Rice Salad with Salmon and Peas

For the rice salad with salmon, chickpeas, and peas recipe, I used Esselunga brand pre-cooked basmati rice, which I find very convenient and versatile!

I revived it with a little EVO oil and then added a bit of saffron for aroma and color.

So it’s a quick recipe if you do like me and use good but already prepared ingredients, but nothing stops you from preparing basmati rice according to the package instructions if you have time and want to!

I just quickly pan-seared the salmon fillets with a drizzle of EVO oil, but if you want, you can marinate them with lemon zest, oil, and herbs for about 30/35 minutes before cooking.

Ingredients for RICE SALAD WITH SALMON, CHICKPEAS, AND PEAS

  • 1 1/4 cups cooked Basmati rice
  • 5 oz salmon
  • 1/2 cup cooked, boiled chickpeas
  • 1/2 cup canned peas, drained
  • 1 packet saffron
  • as needed extra virgin olive oil
  • as needed salt
  • as needed pepper

FOR THE PREPARATION OF THE RICE SALAD WITH SALMON, CHICKPEAS, AND PEAS

For this fish salad, I put a little EVO oil in the pan

and add the salmon cut into medium-sized cubes, allowing it to cook and season, adjusting with salt and pepper.

  • I also add the peas and already boiled chickpeas.

    Stir well, allowing the ingredients to season, and finally add the cooked Basmati rice for me from the Esselunga brand, fluffing it with a fork and continuing “cooking” for a few minutes while always stirring to blend the flavors of this quick seafood salad.

  • In a small cup, I put a little boiling water and dissolve the saffron, adding it and blending it into the basmati rice salad with peas and salmon.

    If I prefer, I add thyme as an aromatic herb and can compose the plates of this rice-based main course!
