Roasted Chicken Thighs with Potatoes

A tasty and flavorful way to enjoy roasted chicken thighs with potatoes and SHALLOTS, a simple dish that to enhance the most, requires the chicken meat to be sprinkled with herbs and left to rest for about 60 minutes.

I used BACON to wrap the chicken thighs but if you prefer pancetta or speck, feel free to change it, the dish will still be delicious ^_^!!!

Andrea, while eating the roasted chicken thighs with potatoes, noticed a less common herb for him, thyme, and almost scrunched up his nice little nose…

Roasted Chicken Thighs with Potatoes

Ingredients

  • 8 chicken thighs (skinless)
  • 8 slices bacon (or pancetta or speck)
  • 1 clove garlic
  • 7 shallots
  • 800 g Potatoes
  • to taste thyme
  • to taste rosemary
  • to taste sage
  • to taste extra virgin olive oil
  • to taste salt and pepper

Preparation of roasted chicken thighs with potatoes

  • Prepare a fine mixture of sage, rosemary, and thyme.

    Take the skinless chicken thighs and rub them with the herb mixture.

  • Adjust with salt and pepper. Place the seasoned chicken thighs in a mixing bowl and cover with wrap.

    Store everything in the refrigerator for at least an hour (you can clearly leave them overnight as well…).

  • After the resting time, wrap each chicken thigh with a slice of bacon (if you want, tie them, I …didn’t).

    Lightly oil a baking dish and place the chicken thighs in it.

  • Also add the cubed potatoes and whole shallots.

    Add the garlic, a drizzle of oil, and bake at 356°F for about 40 minutes or according to your oven.

  • Once cooked (note that chicken must be thoroughly cooked before eating!), portion and serve this simple and delicious dish: roasted chicken thighs with potatoes!

Advice and notes

Chicken meat is a very consumed food on our tables because it’s good and cheap, but it must, and I emphasize must, be eaten well-cooked because consuming raw chicken is very dangerous!

Unlike beef or pork, chicken is a bird, not a mammal, and this leads to diseases to which we are very sensitive, like tetanus, which does nothing to birds but is lethal for us.

Other bacteria include salmonella and campylobacter, which are deadly for us humans, so please cook this chicken meat well, and if any place serves you a dish of chicken that is too pink, don’t eat it under any circumstances!!!
